Taco Casserole:
  • 1 tablespoon of Avocado oil
  • 2 lb. Ground beef
  • 3/4 cup water
  • 1/4 cup of seasoning tacos
  • 2 large Bell peppers (diced)
  • 1/4 large Onion (diced)
  • 2 10-oz cans Diced tomatoes with green chiles (drained)
  • 1 cup of Cheddar cheese
Optional Toppings:
  • Iceberg lettuce (shredded)
  • Fresh cilantro (chopped)
  • Sour cream
  • Fresh tomatoes (diced)
  • Avocados (cubed)
Instructions
  • Use a large skillet, heat the avocado oil, use medium-high heat.
  • Add ground beef, cook and then separate using a spatula, for 8-10 minutes until browned.
  • Add the taco seasoning and water, boil for 2-5 minutes until it thickens.
  • Transfer the beef to a slow cooker, add onions, peppers, tomatoes and green chilies.
  • Cover the slow cooker, and cook for 4 hours at low temperature, or 2-3 hours at high.
  • Before serving stir casserole, set the slow cooker to High and sprinkle grated cheese on top, then cover and cook for 5 minutes until the cheese melts.
  • Then add casseroles with toppings that you like, such as tomatoes, lettuce, avocados or coriander.
