- 8 oz fresh mushrooms sliced
- 3 tbsp butter divided
- 1/2 onion finely chopped
- 1/2 teaspoon thyme
- 3/4 cup grated Parmesan cheese
- 1/2 tsp seasoning salt
- 1 teaspoon soy sauce or soy substitute
- 2 cloves garlic minced, divided use
- 1 tbsp of fresh parsley
- 1 head cauliflower riced
- 1/2 cup heavy cream
- optional drizzle of truffle oil
- The first step, start by mixing mushrooms, soy sauce, and garlic.
- After that, heat 2 tbsp of butter in a skillet, using medium heat.
- Add mushrooms, cook for 2-3 minutes, until caramel.
- Add the last 1 tbsp of butter to the pan, add thyme, onion, garlic, then cook for 4-5 minutes.
- Add the boiled cauliflower, salt, pepper, and seasonings to taste.
- Cook for 9-11 minutes until tender, after that add parmesan cheese, cream, mushrooms and parsley.
- Cook for 2-3 minutes until heated and the cheese melts.
- Drizzle with truffle oil, serve on the table.
