Ingredients
  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 tbspn olive oil
  • 1/2 tsp salt
  • 1 tbspn cornstarch
cashew chicken sauce
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 2 tbspn brown sugar
  • 1/2 tsp ginger, ground or fresh
  • 2 tbspn hoisin sauce
  • 2 tbspn rice wine vinegar
  • 1 tbspn minced garlic or garlic paste
  • 1/2 tsp sesame oil
  • Vegetables / Extras
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 cup of chopped broccoli
  • 1 cup chopped red bell pepper
  • 1 cup cashews
Instructions
  • Start by cutting the chicken breast into small pieces, after that put the chicken pieces in a bowl and add salt and corn flour.
  • Mix all the ingredients in the cashew chicken sauce and stir. Put 1 tablespoon of olive oil into an instant pot, press the saute function, put the chicken in and let it cook for 4-6 minutes.
  • For chicken, it doesn't have to be over cooked.
  • After that, turn off the stir frying function in the instant pot.
  • Add cashew chicken sauce, to the instant pot with chopped broccoli and red pepper, stir together.
  • Put the lid on and turn the valve until it is sealed.
  • Press it manually and set the cooking time to 8 minutes.
  • After that remove the valve to let the pressure and steam come out, add cashew nut and cornmeal to thicken the sauce.
  • Serve on rice and garnish with green onions.
