Ingredients
  • 1 1/2 cups oatmeal (quick or rolled oats)
  • 1/2 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 1 tbsp baking powder
  • 1 cup milk (I use 1%)
  • 1 egg
  • cooking spray
  • 1/2 cup whole wheat flour (I prefer white whole wheat flour)
  • 1/2 cup all purpose flour
  • 2 tbsp canola oil
  • 2 tsp vanilla extract
  • 1 cup of fresh or frozen blueberries
  • 2 tbsp coarse sugar (optional)
Instructions
  • Preheat the oven to 400 degrees.
  • Spray muffin tin with cooking spray.
  • Put all the dry ingredients into a bowl.
  • Use another bowl, beat the eggs, oil, vanilla, and milk.
  • Add the wet ingredients to the dry ingredients, stirring until all ingredients are well mixed.
  • Gently fold the blueberries.
  • Divide the mixture between 12 cups of muffin.
  • Sprinkle the top of the muffin with coarse sugar.
  • Bake 20 minutes until the muffins are browned.
