Fiesta Chicken Casserole

Ingredients
  • 2 cups uncooked spiral pasta
  • 1 cup sour cream
  • 1 cup of salsa
  • 1 tsp cumin
  • 1 can black beans (drained & rinsed)
  • 2 cups cooked shredded / chunked chicken
  • 2 cups shredded cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 can corn (drained)
Instructions
  • First, start by heating the oven to 350 degrees, then prepare a baking pan and spray with Cooking Spray, then set aside.
  • Next, cook the pasta according to the package instructions, don't forget to give salt to the pasta water.
  • Meanwhile, start by mixing sour cream, cumin, salsa, garlic powder, and shallot powder in a large bowl.
  • After that, drain the pasta, after it is cooked and add to the sour cream mixture.
  • Add corn, black beans, chicken, and 1 cup of grated cheese, stir together until mixed.
  • After that, pour into the pan, and sprinkle with cheese, cover with aluminum foil and cook for 20 minutes.
  • Remove the aluminum foil, and cook for 5 more minutes, garnished with tomatoes, green onions, and avocado slices.
