Fiesta Chicken Casserole

- 2 cups uncooked spiral pasta
- 1 cup sour cream
- 1 cup of salsa
- 1 tsp cumin
- 1 can black beans (drained & rinsed)
- 2 cups cooked shredded / chunked chicken
- 2 cups shredded cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 can corn (drained)
- First, start by heating the oven to 350 degrees, then prepare a baking pan and spray with Cooking Spray, then set aside.
- Next, cook the pasta according to the package instructions, don't forget to give salt to the pasta water.
- Meanwhile, start by mixing sour cream, cumin, salsa, garlic powder, and shallot powder in a large bowl.
- After that, drain the pasta, after it is cooked and add to the sour cream mixture.
- Add corn, black beans, chicken, and 1 cup of grated cheese, stir together until mixed.
- After that, pour into the pan, and sprinkle with cheese, cover with aluminum foil and cook for 20 minutes.
- Remove the aluminum foil, and cook for 5 more minutes, garnished with tomatoes, green onions, and avocado slices.
