Instant Pot Santa Fe Chicken Burrito Bowls

Chicken bosoms, corn, dark beans, tomatoes with green chilies, cilantro, green onion, and a few flavors are all you need. This Santa Clause fe chicken is stacked with season, you folks! Ingredients
Santa Fe Chicken
  • 1 1/2 cups frozen corn
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 3 boneless, skinless chicken breasts about 1 1/2 lbs
  • 1 can diced tomatoes with green chilies drained
  • 1 can black beans drained & rinsed
  • 1 can chicken broth
Burrito Bowls
  • Shredded lettuce, avocado, sour cream, lime wedges, shredded cheese, etc
  • cilantro lime rice or any rice you prefer
Instructions
  • Add diced tomatoes, black beans, frozen corn, chicken broth, coriander leaves, onion, garlic, onion powder, and cumin to the Instant Pot.
  • After that, cut each chicken breast into 2 or 3 pieces, sprinkle both sides of the chicken with salt, place it on top of the mixture, stir gently until most of the chicken breast is covered with the mixture.
  • Next, in Instant Pot, press the 'poultry' button set time to 25 minutes.
  • When finished, remove the steam bath, shred the chicken with a fork, stir it together it will become thick, it's okay because it will make the chicken become moist and tender.
  • Serve chicken santa fe by filling a burrito bowl with your favorite toppings.
