Ingredients
- 3 tbspns extra virgin olive oil
- 1/2 medium diced yellow onion
- 1 pound boneless skinless chicken breasts (cut into litle size)
- 2 cups shredded cheddar cheese
- 2 cloves of garlic (minced)
- 1 tsp salt and ground pepper
- 1 cup uncooked extra long grain white rice
- 2 1/2 cups broccoli florets (bit sizes)
- 2 1/2 cups chicken broth
- First, start with a large skillet, add 2 tbsp olive oil, and saute the garlic, use medium heat.
- Seasoning chicken using pepper and salt.
- After that, use heat to high, place the chicken in the pan.
- Cook the chicken until browned and add the garlic, cook for 1 minute.
- After that, set aside the chicken, and put the olive oil back in, add the uncooked rice to the olive oil, stir-fry for a few minutes.
- Pour the chicken stock into the pan, reduce the heat then bring to a boil and cover with a lid.
- Cook for 12 minutes.
- Sprinkle broccoli over chicken and rice, then stir.
- Continue cooking, don't forget to close it, and cook for 8 minutes, use low temperature.
- When done, remove from the heat and stir with 1 cup of cheese.
- Sprinkle the remaining cheese on top, and cover, leave for 1-2 minutes.
- Serve on the table.
