Ingredients
- 1 can black beans (drained & rinsed)
- 1 can pinto beans (drained & rinsed)
- 1 can petite diced tomatoes (undrained)
- 1/2 tsp garlic powder
- 1 can sweet corn (drained)
- 1 can chicken breast (drained & flaked)
- 1 can green enchilada sauce
- 1 can low-sodium chicken broth
- 1 packet taco seasoning
- 1/2 tsp cumin
- 1/2 tsp Chile powder
- Mix all ingredients into a large soup pan, then boil over medium-high heat.
- Let it simmer for 15 minutes, stirring occasionally. For serving, serve with avocado, sour cream, grated cheese or tortilla chips.
