Ingredients
  • 2 tbspns olive oil
  • 2 cloves garlic minced
  • 1 large zucchini washed
  • 1/2 tspn ground paprika
  • 3/4 cup shredded cheese
  • 3/4 cup freshly grated mild cheddar cheese
  • green onions (optional) for garnishes
  • 2 fresh sweet corn on the cob
  • 1.5 cups cooked fresh rice
  • 1.5 cups of salsa
  • 1 cup crushed tomatoes
  • 1/2 tspn salt
  • 1/4 tspn black pepper
  • 1/2 tspn ground cumin
Instructions
  • Use a large skillet, heat the olive oil.
  • After that add the minced garlic, saute for 20 seconds.
  • Next, add zucchini and corn, saute until softened.
  • Next, add rice, then stir evenly.
  • Don't forget to add crushed tomatoes, pepper, salt, cumin, and paprika.
  • Next, mix everything well, cook using low heat for 5 minutes, continue to stir.
  • If it is slightly cooked, turn off the heat, sprinkle the cheese over the rice mixture, cover the pan, and let it sit for 5 minutes, or until the cheese has melted.
  • Serve on the table.
