Ingredients
  • 3 lbs chicken breasts (Skinless & Boneless)
  • 4 teaspoon salt (divided)
  • 1 tablespoon of fresh parsley (optional for garnishes)
  • vegetable oil
  • 4 tsp black pepper (divided)
  • 1 cup all-purpose flour
  • 2 cups of breadcrumbs / panko
  • 4 large eggs
  • 1 teaspoon Dijon mustard

Instructions
  • First, prepare your chicken breast. Use a plastic ziplock canton, then use a meat hammer to mash, use the flat side of the hammer, until it reaches a thickness of 1/4 "inch.
  • Seasoning chicken with pepper and salt, then set aside.
  • Use a shallow plate, stir in flour with 1 tsp of salt and pepper, use another shallow dish to whisk bread crumbs with 1 tsp of pepper and salt.
  • Next, use another shallow dish to beat the eggs, with 1 tsp of salt, dijon mustard and pepper.
  • Place the plates in order.
  • Start coating the chicken with the flour mixture, dip it in the egg mixture, make sure everything is covered with eggs, and finally, put it in the panko / breadcrumbs mixture.
  • Heat 1/4 cup of vegetable oil, use medium-high heat, after the oil is hot, put the chicken schnitzel in the pan, then fry.
  • You can add more oil if desired, fry for about 2-3 minutes per side or until the schnitzel is brown, then transfer to a plate, repeat with the remaining chicken.
