Ingredients
- ¼ cup buttermilk
- ¼ cup breadcrumbs
- 4 chicken breasts (boneless) (skinless)
- 2 tbspns dry sherry optional
- 1 cup of heavy cream
- 4 tbspns unsalted butter
- 1 cup grated Parmesan cheese
- 2 tbspns garlic & herb cheese such as Boursin
- ½ tspn freshly ground black pepper
- 2 tbspns canola oil
- ¼ cup chicken broth
- 1 can pimentos (drained)
- 1 can diced tomatoes (drained)
- ¼ cup fresh basil chopped
- First, start by placing the chicken breast on a shallow plate, then cover it with buttermilk.
- Spread breadcrumbs on different plates.
- Next, heat the pan over medium heat, then add 2 tablespoons of butter, and 1 tbsp canola oil.
- Next, dip the chicken in a breadcrumb, then place it in a hot pan, cook for 5 minutes until golden.
- Add the remaining butter and oil, turn over the chicken breasts, cook for 5-7 minutes until the chicken is cooked.
- Next set the chicken to the plate.
- Add chicken and sherry stock to the pan, bring to a boil over medium heat.
- Then, add pimentos, cream and tomatoes. Simmer for 1 minute, stirring constantly.
- Next, reduce the heat to low, add parmesan cheese, garlic, black pepper and basil.
- Bring to a boil and cook until the sauce is reduced by half.
- Add chicken to the sauce, then heat.
- Serve on the table with pasta or rice.
