Chicken:
  • 1 lb chicken breasts (skinless and boneless)

  • 4 cups unsalted chicken stock
  • 1/2 cup low-fat milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • 1/4 teaspoon onion powder
Dumplings:
  • 1 cup all-purpose flour
  • 1/4 teaspoon onion powder
  • 1/2 cup low-fat milk
  • 2 tablespoon butter
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon dried chives
  • 1/2 teaspoon dried parsley
Instructions
  • First, use a large saucepan. Use medium heat. Add 1 spoonful of olive oil, heat it. Add chicken breast, seasoning with pepper and salt.
  • Cook for 4-5 minutes on each side, when done, transfer to a plate.
  • Next, add 1 tablespoon of olive oil to the pan, add celery, carrots, and onions. Stir together, cook for 5-6 minutes, after that, add the stir-fried garlic for 1 minute.
  • Add flour and cook for 1 minute, stir until evenly distributed.
  • Pour in the broth and milk, when the liquid boils, stir until it starts to thicken.
  • Sprinkle with pepper, salt, bay leaves, onion powder and thyme. Stir until evenly distributed, cover and simmer for 9 minutes.
  • Put the chicken back into the pan, add it with peas and corn, remove bay leaves, stir until evenly distributed.
  • When boiling, combine the ingredients for the dumplings into a medium bowl.
  • First of all, combine flour, baking powder, pepper, salt, leeks, parsley and onion powder.
  • Pour milk then stir a little, add 1 tsp of butter, stir until evenly distributed.
  • After that, reduce the heat to low, add 2 balls of dumpling dough, cover and let the dumplings cook for about 10-12 minutes.
  • After that seasoning with pepper and salt serve it on the table with dried chives and parsley.
